Abstract: The study presents a comprehensive analysis of cellular materials heating as a potential side effect of strong electric fields. The analysis is based on a coupled electro-thermal model using finite element approach. The numerical simulations are conducted for the same conditions of the experimental study concerning measurements of electrically assisted mass diffusion of bioactive compounds from various vegetable tissues after electric treatment and may aid in explanation of experimental observations and in understanding the mechanisms of heat transfer in order to minimize damage to the tissues resulting from extra high electric treatment applied
